MANIC MUSIC MONDAY

Another dreary dark day here in NYC. The only thing to turn this day around for me is good music. Music plays such a big role in my life. It helps me through tough times, good times and makes fun times more memorable. This past weekend I came across some music I haven't played in a bit and across a video that stopped me dead in my tracks. So I just had to share -  From Meems to you,  enjoy!

I hate waste. Especially when it comes to juicing whole foods. The pulp left from apples, beets, and carrots rarely gets dumped out. Why don’t you try to recycle your pulp into something delicious! 

Here is a recipe for NO BAKE CARROT CAKE BALLS for when your craving a sugar laden piece of carrot cake this is the healthy yummy alternative.

BALLY GOODNESS
1 ½ Carrot Pulp 
1 Large Apple, Grated 
1/8 cup of dried cranberries 
½ Dried Shredded Coconut 
1 Tbs Coconut Flour 
¾ Tbsp Cinnamon 
Pinch of Nutmeg 
1-2 Tbsp Raw Honey 
2 Drops of Liquid Vanilla Stevia 
¼ Cup Raw Almond Butter 


YUMMY CHOCOLATE COAT
1-2 Bars of 85% Chocolate 
1-2 Tsp Coconut Oil 
Depending on your pulp you may want to add more or less to get the desired textur


HOW TO BALL OUT
1. Press as much juice out as possible from the pulp 
2. Mix Everything together and form into balls 
3. Place in freezer for 30 minutes 
4. In the meantime - Prepare your coating! Melt the chocolate and add the coconut oil 
5. Dip the Balls into the melted mix and set aside to cool in fridge
6. Now enjoy! A nutritious healthy snack. Be careful they are addicting!
